2 Tbsp EVOO
2/3 cup uncooked brown rice
1 1/4 cup dried lentils
1/4 cup chopped onion
3 cups water
1/2 tsp salt
1 egg or flax egg
1 1/4 cup breadcrumbs
3/4 cup Parmesan cheese
1 tsp dried basil
1/2 tsp minced garlic

Heat 1 Tbsp EVOO in a large sauce pan. Add the onion and rice and stir until golden brown.
Add lentils, water & salt and bring to a boil.
Reduce heat, cover, and cook until all the water is absorbed – approx 40 min.
Add additional water if needed, it should be thick.
Remove from heat and let it cool.
Add lentils & rice to a food processor. Add egg, breadcrumbs, basil, cheese & garlic. Process until well combined & the texture of ground beef.
Form into patties, about 1/2" thick.
Heat remaining Tbsp EVOO in a large skillet.
Cook patties in batches; drain on paper towels.
Serve on a whole wheat bun with all the fixin's or put them in an airtight container in the fridge. They also freeze really well!

Do you have a funny or interesting story about your recipe

My whole family loves these! This recipe makes about 12 burgers (freeze some!). Feel free to add more spices or jalepeno peppers to jazz them up!
