Zucchini Pasta with Basil

1 medium sized zucchini, spiralized into spaghetti-like noodles
1 small to medium onion diced
1 garlic clove minced
1- 14 ounce can diced tomatoes drained
1 tablespoon Extra Virgin Olive Oil
Salt and Pepper to taste


Pour Extra Virgin Olive Oil into skillet, add diced onions and saute over medium heat until softened, about 8 minutes. Add in minced garlic and tomatoes, salt and pepper. Stir together and saute for about 5 minutes. Add in spiralized zucchini, stir together, cover and simmer until warm, about 5 minutes.

Serve immediately.
