Cauliflower Soup

Ingredients

2 Tbsp EVOO
2 tsp minced garlic
2 c leeks (white parts only, chopped)
1 tsp sea salt (plus more for taste)
1 large head cauliflower, chopped
7 c vegetable broth
1/4 cup raw unsalted cashews or blanched almond slivers
Optional Garnish: chopped chives or grated nutmeg

Directions

1. Preheat your pan over medium heat, add oil, leeks and salt. Salute for approx 3 min until leeks are soft and then add the cauliflower and sauté for an additional minute.
2. Add the broth and raise heat until soup comes to a boil. Then reduce heat to medium and summer for 20-30 min or until the cauliflower is tender.
3. Remove from heat, cool slightly and add cashews/almonds
4. Add soup to a bender (in batches) or use an immersion blender until you have a smooth and creamy consistency.
5. Rewarm over low heat
6. Serve and garnish with chives or grated nutmeg.
