Brilliant Nut Butter Paleo (almost) Bread

Ingredients

4 large or 5 smaller eggs
1 1/2 small bottles of almond butter,
1 1/2 tablespoons of lemon juice
3/4 teaspoon of baking soda
large pinch of sea salt flakes (optional, I prefer to add up to a teaspoon of salt)
Optional Extras - chilli flakes, sunflower seeds, sesame seeds, other nut butters, adding some sweetness

Directions

I have tried whipping the eggs and making it all carefully in stages, but now just dump all ingredients into my mixer. I give it a very good beating with the scraping beater till it's a little paler in colour. Super easy and works just as well.

I just tend to be careful not to pour the lemon onto the baking soda as it may activate it and lose it's rising power before the baking.

I've made oodles and oodles of different grain-free 'breads'... THIS ONE IS IT... super easy and good for a sandwhich or toasting or just as is. It's almost paleo, except for the Baking soda, but you do need it. I love playing around with what I add to it.

I keep it in the fridge and slice it thinly AND LOVE IT...
