Super Quinoa and Sweet Potato with Kale

Ingredients

1 cup cooked red quinoa
1 cup chopped Kale
2 tbsp chopped onion
1/2 cup sweet potatoes
1 tbsp Bragg Liquid Amino (optional)

Directions

1) Rinse and cook red quinoa as directed.
2) Peel and dice sweet potatoes into very small cubes
3 Finally chop onion
4) Remove stem from kale and finally chop to make 1 cup

Combine sweet potatoes, onion and kale in small saucepan. Add just enough water to steam vegetables (about 1/4 cup). Cover and cook until sweet potatoes are soft - approximately 15 minutes. Add cooked quinoa and Bragg Liquid Amino. Heat through and serve.

It is a great choice during a detox or anytime as a side dish in place of rice. There are various colors of quinoa and sweet potatoes available that can make this a very colorful dish. The recipe in the image was made using red quinoa and white sweet potatoes.
