Vegetable Broth Powder

2 C Nutritional Yeast, found in health food stores in the supplement section
1/3 C sea salt
2 T onion powder or dried chopped onions*
1 T turmeric
2 T dried dill weed
1 T garlic powder
2 t dried lemon peel**
1 t celery seed
1 t basil
1 t thyme
1 t dried parsley


Using a heavy duty blender like a Vitamix or BlendTec, place all ingredients in the blender and blend until it is an even colored powder. Add the parsley and pulse just a few times. Store in an airtight container. Combine 1 t of powder to 1 C of water to make your broth.

* Slice an onion and lay it out on your counter on a plate for a couple of days until almost dry. When you need to heat your oven, put the onion in the oven for just a few minutes until the onion gets totally dry. It is okay if the onion browns a bit. You may need to leave the onion out on the counter again. Once the onion is completely dried, mix it in the blender. One onion is about 2 Tbs.

** Peel a lemon and let the peel dry out for a 2 days. It will start to curl. Once dried, put in the oven for a couple of minutes while the oven is heating up. Remove from oven and mix in the blender. One lemon makes 1 tsp.
