Quinoa Tabouleh

2 cups of red quinoa
1 cup water
1/4 cup of virgin olive oil
1/4 cup of fresh lemon juice
1/2 tsp of sea salt
3/4 tsp of pepper
3/4 cup of fresh parsley
1/2 cup of fresh mint
1 small red onion
2 cloves garlic
2 Roma tomatoes
1 cup of cucumber
1/2 cup black olives
3/4 cup garbanzo beans


It is assumed that all ingredients you purchase are organic.
Quinoa preparation: Place in strainer and rinse well. Place in pot with the salt, bring to a boil then on simmer until all water is absorbed. Do not overcook. You want a grainy consistency.
Cool Quinoa. Except for the garbanzo beans, finely chop all ingredients. Add all ingredients to the cooled quinoa. Mix gently. Place in refrigerator for several hours to allow the flavors to soak in.
Best served with felafel, hummus and pita bread.
