Lentil Salad

2 packages pre-cooked steamed lentils, found in Trader Joe’s produce section (or about 5 cups)
½ of a seeded sweet orange, yellow or red bell pepper, chopped
3 green onions, diced
1 jalapeño pepper, seeds and membrane removed, minced
½ cup chopped fresh cilantro
juice from 3 limes
1 avocado, chopped
1 Tbsp crushed garlic
2 tsp dried oregano
1 tsp paprika
Fresh ground pepper to taste
Optional: add 1 tsp cumin and 1 tsp chili powder to add more Mexican flair


If using the packaged lentils, open the packages and break up and crumble apart with hands into a large bowl. Add the rest of the ingredients to the cooked lentils and stir well to combine. Refrigerate for several hours (or a day ahead) before serving. Serves 8 as a hearty side dish.

Note: Make it a Greek style salad by substituting the 2nd through 5th ingredients with ½ of a large cucumber (chopped), 3 Roma tomatoes (diced), ½ of a small red onion (diced), 1/3 cup pitted kalamata olives, ½ cup chopped fresh parsley and juice from 3 lemons.
