White Bean Salad

1 14.5 oz can of white beans

1 cucumber, diced

½ c. cherry tomatoes, halved

½ c. diced red onion

¾ c. chopped bell peppers (red, green, yellow)

3 T sliced kalamata olives


Mix and chill. Serve in whole grain pita bread pockets or with multi-grain crackers. You may adjust vegetable amounts to your taste.
