Directions | Heat grape seed oil in pan, add garlic, zucchini, and red onion. Saute' until tender. Add black olives, cherry tomatoes, basil, salt and pepper, stir and cook until heated. Remove from heat. Place 1/4 cup brown rice on plate, top with vegetable mixture, sprinkle 1/4 of the pine nuts, and drizzle with 1/4 of the olive oil. This will make 4 servings.

Do you have a funny or interesting story about your recipe | This recipe has been made in all different ways with all different ingredients. I came up with this when I had to come up with something quick and wanted to use up what was in the refrigerator. So it has been used with all sorts of different veggies. You can add more, or use different ones. I have used, peppers, mushrooms, pea pods, just about anything! You can also use more than 1/4 cup just adjust to what you like! How can you go wrong with veggies? It's always good! You can also use it as a meal and not just as a side!
