Ingredients | 2-3 Whole Zucchini
1 Pint cherry tomatoes
1 clove of minced garlic
Chopped basil
Extra virgin olive oil
Sea Salt

Directions | Using a box grater, shred the zucchinis. Place in a colander and sprinkle with some salt in order for the zucchini to "dry." Let sit for 15 minutes to an hour. Chop tomatoes and basil. In a large saute pan, heat 2 teaspoons of oil and sweat the garlic. Place chopped tomato mixture in and gently combine. Finally, gently stir in shredded zucchini until heated through. Serve immediately and enjoy with a salad.

Do you have a funny or interesting story about your recipe | This is one of my detox alternative recipes. Usually by Day 5, my clients, (myself included), are looking for something other than salad. This is a great dish to have without an additional salad. Most importantly, it is something you can feed the whole family. It is very satisfying and delicious!
