Easy tea-time cookies

Ingredients

1 + 1/2 cup tigernut flour
1/2 cup coconut flour
2 eggs
50 - 75 g soft coconut oil
2 tsp vanilla powder
1 tbsp maple syrup + 3 tbsp coconut palm sugar

Directions

Preheat oven to 325 degrees (Fahrenheit) or 160 degrees (Celsius). Combine all ingredients in food processor. Using your hands, make from dough little balls and press them flat. Place your cookies on a parchment-lined baking sheet and bake 20-25 minutes. Let them cool and enjoy with cup of tea.
