Berry Good Gluten Free Coffee Cake

Ingredients

Main batter:
1/2c ground chia seed
3 tsp aluminum free baking powder
1c almond or soy milk (or other liquid of choice)
2 eggs
2 tsp vanilla
can add sweetener to taste (1/2c)

Additional filling:
2-3 tbs ground cinnamon
1/2 tsp ground nutmeg
1/2c packed brown sugar
1/4c melted butter

Fruit to add:
1 1/2c Blueberries, or Peaches or combination of both

Directions

Mix the main batter ingredients till smooth. Set aside
Measure fruit. Set aside.
Mix additional filling. Set aside.
Pre heat oven to 350 degrees

1. Slightly grease a 9x13 baking dish with butter or coconut oil.
2. Spread fruit on bottom of baking dish.
3. Evenly pour and spread main batter over fruit.
4. Spoon additional filling over top of main batter. Use a knife to swirl cinnamon mixture through batter.

Bake 25 -30 minutes or till lightly browned and toothpick comes out clean.
