Creamy Breakfast Smoothie

1 cup soaked nuts (I used almond and cashew)

2 cups of coconut water

1 cup frozen strawberries

1/2 cup frozen blueberries

1 frozen banana

4 Tablespoons Mila (chia)


Add the nuts and coconut water, blend well. Then add the remaining ingredients and blend again until smooth. I use frozen fruit so that it stays chilled without adding ice, but if you use fresh fruit, add ice as well.

I realized last night that we had run out of eggs for breakfast. Smoothies are great, but I usually eat something else with them, as I need a lot of protein to start my day. I took some raw almonds and cashews out of the fridge and set them to soak in water overnight. In the morning I drained the water and used about 1/2 cup of each in addition to my usually medley of coconut water, fruit and Mila.

Often times, my seven and four year old will not try my new creations. This time I let them know that there was a secret ingredient and I would tell them when they were finished. Among the symphony of mmmms, I heard guesses of what it could be. One said, “I bet it is ice cream.” The other seemed to agree and they were both convinced it was so delicious because I had added ice cream (did they forget who there mom is?). I was pleased that adding nuts had made this power breakfast taste smooth and sweet, and that I had found a new favorite. The secret might be the amazing powers of the Vitamix, but I think any blender will do.
