Quinoa Sweet Potato Patties

Ingredients

2 Baked Medium Sized Sweet Potatoes
1 Cup Cooked Quinoa
1 Cup Cooked Black Rice
1/2 Cup Chopped Green Onions
1/2 Cup Cooked Black Beans
1 Tsp Organic Chili Powder
1/2 Tbsp Celtic Sea Salt
1/2 Tsp Ground Black Pepper
1 Large Egg
2-3 Tbsp Organic Unrefined Coconut Oil (for cooking in pan)

Directions

Remove skin from sweet potatoes
Mash in large bowl
Add the rest of the ingredients (Except for the coconut oil)
Mix together
Put oil into large skillet
Form into patties
Fry both sides 3-5 minutes
Serve on top of salad or in a bun
