"Not So Guilty" Vegan Banana Bread

Ingredients

1/2 cup almond (or other nut), hemp or soy milk
4 Tbsp coconut oil or olive oil, extra virgin cold pressed
4 Tbsp maple syrup or use a little Stevia or Sucanat instead
1 tsp pure vanilla extract
4 ripe bananas
1 Tbsp Chia seeds + 3 Tbsp water (this acts as an egg replacement)
2 cups almond or spelt flour
1 tsp baking soda
2 tsp baking powder
1 tsp cinnamon powder
1/2 tsp seasalt
1 cup chopped nuts + seeds (for example walnuts and pumpkin seeds but any mix of your preference will do)
1/2 cup raisins

Directions

Preheat the oven to 350º F (180º C);
Mix the Chia seeds with the water and let sit for about 10 min or longer (it will form a gel like substance);
Lightly oil a loaf pan or line with baking paper;
Put the milk, oil, syrup, vanilla, bananas and Chia-water mixture in a blender and blend till smooth, about 15 seconds;
In a large bowl mix the dry ingredients. Add the wet mixture and fold to combine. Add the nuts and raisins;
Pour into the loaf pan. Bake until an inserted toothpick comes out clean. It depends on your oven but mine takes about 45-50 min. I suggest you check every 5 min. after the half hour mark;
Allow to cool before removing from the pan;
This bread freezes well so go ahead and double the recipe if you like;

A great variation is to omit the raisins and the cinnamon and use 1/2 cup of chopped dark chocolate OR 1 scoop of organic 70 % cacao powder instead.
