Avocado Fries

Ingredients

1 Avocado
2 eggs
1 cup panko (option; corn meal)
1/2 cup whole wheat flour (option; coconut flour)
Salt and pepper as desired
Our spices can be added (garlic, onion powder)

Directions

Slice avocado in half, remove seed. Slice each side in 1/4 inch slices sideways from top to bottom. It's better to have a slightly harder avocado and to remove the peel after slicing. Whip the eggs.
Dip each slice in flour(add spices to flour if desired).
Coat the slices in egg and roll them through the panko (corn meal).
Place the slices on an oven sheet.

They are now ready for the oven. Bake at 350F for 15 minutes or until crispy.
