Mini Quinoa Cups

Ingredients

1 cup quinoa, cooked, warm
1/2 cup grated parmesan cheese
2 eggs
1 clove garlic, minced (optional)
Salt, pepper to taste
1/3 cup chopped fresh spinach leaves
1/3 cup chopped sauteed onions and sweet peppers (optional)

Directions

1. Preheat oven to 350 degrees and grease a mini muffin tin.
2. In a medium bowl, mix the quinoa with the cheese to melt the cheese. Add the eggs, garlic, salt, pepper and veggies. Stir to combine.
3. Spoon mixture into muffin tins, filling to the top.
4. Bake at 350 degrees for 20 minutes.
5. Remove from oven and let cool for 10 minutes.
6. Run a small knife around the edges to loosen and pop out of the muffin tin.
7. Enjoy - these travel well and are delicious cool or warm!
