2-3 (3/4 c) red peppers roasted fineley chopped
3 cloves garlic crushed
1/2 c calamata olives finely chopped
1 shallot finely chopped
1 tbsp balsamic vinegar
1 tbsp olive oil
3 tbsp fresh basil chopped
Salt and pepper to taste
Directions
Combine all ingredients in a large bowl. Let the flavors marinate for a week refrigerated or serve right away. Serve on whatever delicous food you thinks needs a big flavor to set if off.
